This is Ak’s sweet doggy, Lucy. She’s named after Lucy from The Chronicles of Narnia, which is a personal favorite of AkM. Expect to see more of her as AkM begins a summer together.
Ak was off the books for Spring Break and we decided to get away to a little cabin in the woods. It was a good time of coffee, s’mores, conversation and good music from Mixtapes of The Oh, Pioneer. Here’s a few of my photos to share with you guys.

Ak&M had a creative day! We made journals from recycled items, and they turned out beautifully. Both of us are advocates from journaling. It helps to exercise creativity, your mind, helps with meditation and relaxation.

Cranberry Orange Muffins
Those who know me well know I love to bake. Today, I converted the former version of this yummy, but not so healthy recipe into a yummy very healthy version. This could easily be made vegan by using an egg substitute and rice, soy, or almond milk rather than cow’s milk. Enjoy! AK
1 cup dried cranberries
1/4 cup fresh orange juice
2 cups whole wheat pastry flour
2 tsp baking powder
1/4 tsp flax meal
1/4 cup unsweetened applesauce
1 tsp orange zest
2/3 light agave nectar
2 eggs
1/4 cup milk
Preheat oven to 375 degrees. Simmer cranberries and orange juice in a small sauce pan for 5 minutes. Remove from heat and let cool. Sift flour, baking powder, and salt in a medium bowl. Combine flax, applesauce, agave, and orange zest in large bowl. Add eggs 1 at a time and mix until combined. Alternate adding flour, milk, flour, milk, flour to the flax mixture. Fold in cranberries. Spoon into 12 muffin cups and bake for about 20 minutes or until golden and toothpick comes out clean. Store in airtight container or eat them hot!
Back to School
I suppose it is time for me to post, so I shall do just that. Meagan suggested I write something about my returning to school on Monday of this week. I am not sure if I am ambitious of just plain dumb, but this semester I am taking 18 hours. Yep, I am just plain dumb. Nonetheless, in the past two days I have reviewed 6 syllabi and met 6 different teachers, one of whom I am convinced is the offspring of Jack Black and Zach Galifianakis. Needless to say, this will be an interesting semester.
